I have this delicious recipe for a yeast-free banana bread.
Banana Bread
Makes 2 Small Loaves or 1 Large Loaf
Preheat oven to 350
In one bowl, combine:
1/2 stick (4-5 tablespoons) butter, softened
2 eggs
2 or 3 very ripe bananas
2/3 cup sugar
Try to keep chunks as small as possible, keeping in mind they should be no bigger than 1 cm in length!
In another bowl, combine:
1 1/3 cup all-purpose unbleached flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon cinnamon (optional)
Combine dry and wet ingredients, making sure they are mixed through thoroughly.
You can also add yummy nuts, chocolate chips, or other small toppings at this stage!
Pour mixture into greased (buttered) baking pans, and put in oven. Check every 10 minutes. Ready when toothpick comes out clean!
Whats great about this recipe is that there is no waiting time! In fact, here is a little alternative way that gets a just as delicious result! You can prep the dough one day, and make it the next! You can even top it off with some chocolate sauce or vanilla ice cream!
Alternative Option
Combine ALL ingredients EXCEPT BANANAS in one bowl. Stick this into the fridge for up to 3 days.
On chosen day to bake, simply mix in bananas! Bake at 350, and wait 'till toothpick comes out clean!
These delicious loaves last for weeks! You can either put in refrigerator or freezer, but keep in mind if you placed it into the fridge you should eat it sooner than one from the freezer!
